It goes especially well with chili (See my chili recipe).<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>Cooking spray to grease pan<\/li>\n<li>1\/4\u00a0cup butter or margarine (1\/2 stick)<\/li>\n<li>1\u00a0cup milk<\/li>\n<li>1\u00a0large egg<\/li>\n<li>1 1\/4\u00a0cups \u00a0cornmeal<\/li>\n<li>1\u00a0cup all-purpose flour<\/li>\n<li>1\/2\u00a0cup granulated sugar<\/li>\n<li>1\u00a0tablespoon baking powder<\/li>\n<li>1\/2\u00a0teaspoon salt<\/li>\n<li>optional\n<ul>\n<li>1\/4 cup Frozen corn (thawed)<\/li>\n<li>Jalapeno diced.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>Directions<\/p>\n<p>Add all ingredients and any optional ingredients for variations to a bowl and mix until combined. There may still be some lumps but that is ok. Pour into greased baking pan and bake in a preheated oven at 400 degrees for 20 mins. After 20 mins insert a toothpick and if it comes out clean it is done.
