You can make it ahead of time and store it in the fridge an it will last up to 2 weeks.<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>1\/2 cup of Red Lentils<\/li>\n<li>32 oz chicken or vegetable stock<\/li>\n<li>2 tbsp tomato paste<\/li>\n<li>1 tsp cumin<\/li>\n<li>1\/2 tsp cayenne pepper<\/li>\n<li>1\/2 of a large onion finely chopped<\/li>\n<li>large carrot finely chopped<\/li>\n<li>I tsp salt<\/li>\n<li>4 cloves garlic finely choppe<\/li>\n<li>I tbsp olive oil<\/li>\n<li>1 \u00a0lemon cut into wedges<\/li>\n<li>optionally \u00a0top with freshly ground pepper and cilantro<\/li>\n<\/ul>\n<p>Directions<\/p>\n<p>Fry onion, garlic and carrot in the olive oil till translucent, but not browned. \u00a0Add in the rest of the ingredients except lemon and bring to a boil, then \u00a0reduce heat and simmer until lentils are starting to fall apart.
