Everyone that has tried it likes it. It can be made to be vegetarian or vegan also.<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>1 can black beans<\/li>\n<li>2 chipolte peppers chopped finely (from canned chipolte w\/adobo sauce)<\/li>\n<li>1\/2 onion finely chopped in food processor<\/li>\n<li>1 carrot finely chopped in food processor<\/li>\n<li>4 cloves garlic<\/li>\n<li>1 cup chicken or vegetable stock<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>sour cream (optional)<\/li>\n<\/ul>\n<p>Directions<\/p>\n<p>Add olive oil to sauce pan and over medium heat fry the garlic, onion, and carrot for about 5-7 minutes until soft. Add in chicken or vegetable stock and black beans and chipolte peppers \u00a0and simmer for about 30 minutes. Using a stick blender blend the mixture until smooth.
